Recipe: Ayurvedic Banana Bread

We’ve seen throughout lockdown that everyone’s favourite, the classic banana bread has been made umpteen times. With the help of the wonderful Emma, AKA Mrs Hollingsworth, we have the simply recipe to a delicious Ayurvedic banana bread. Drawing on the hydrating and anti-inflammatory ingredients within our Radiance skincare range, she added a hint of Turmeric and sweet goji berries for that Indian twist on a British classic. INGREDIENTS:

4 flax eggs (4 tbsp ground flaxseed with 12 tbsp cold water, set aside for 5 minutes to form a gel)

5 tablespoons coconut sugar

2 tbsp coconut oil

80g (2/3 cup) ground almonds

70g (2/3 cup) oats

2 tablespoons goji berries

3 ripe large bananas (or 4 medium), mashed

1 tbsp cinnamon

1 tsp ground ginger

1 tsp ground turmeric

METHOD:

Preheat the oven to 180°C and line a loaf tin with baking paper. Add the oats, ground almonds, coconut sugar and spices to a bowl and stir until combined.

In another bowl, beat together the bananas, coconut oil and flax eggs, and slowly pour this in to the bowl with the dry ingredients, stirring well. Finally stir in the goji berries and spoon the mixture into your tin.

Bake for 1 hour (or until a skewer inserted comes out clean). Leave to cool and then dig in to your very own Ayurvedic Banana Bread!
