Kapha Cauliflower

We were lucky enough to have budding Insta-chef and supper club host - @kirthanaa - cook us up a refreshing yet low key and chilled out recipe!

Kirthanaa was inspired by the key ingredients found within our Purifying range, such as mint and citrus, and tailored her recipe to satisfy summer appetites that are in need of a kick start to their digestion.

This Kapha Cauliflower is perfect for Pitta season (AKA summer) food for the Kapha dosha. It speeds up a slow Kapha metabolism as it is harder to digest requiring more energy to do so, whilst fresh mint uplifts the senses and tastebuds and a citrusy yogurt dressing gives lightness (meaning it will definitely all be gone.. very quickly.)

Spiced Cauliflower fry with Mint Yoghurt

Spiced Cauliflower 1 medium sized cauliflower 5 garlic cloves A thumb of ginger 80ml water 1 tsp salt 2 tsp chilli powder ½ tsp garam masala ¼ tsp turmeric powder, optional 3 tbsp plain flour 2 tbsp rice flour 2 tbsp corn flour 50g cashew nuts A handful of curry leaves Vegetable Oil

Mint Yoghurt

150g alpro plain yoghurt A handful of mint ¼ tsp cumin Pinch of salt Squeeze of lemon

Method:

- Cut the cauliflower into small florets and place them in a large mixing bowl. - Blend the ginger and garlic with the water until it forms a paste. - Add the ginger garlic paste, spices and all the flour to the cauliflower florets and mix thoroughly. - Fill a heavy bottomed pan with vegetable oil and heat on medium heat (or to 180 C if using a thermometer). - Once the oil is ready, fry the curry leaves and cashew nuts until the nuts are brown and the leaves are crispy (30 seconds – 1 minute). - Next, fry the cauliflower in batches until golden and crispy then place on a plate of kitchen paper to dry. - To make the sauce, place all the ingredients in a blender and blitz until smooth. - Plate the fried cauliflower and garnish with the cashew nuts, curry leaves and mint sauce.
